Mississippi Mud Cake

Mississippi Mud Cake is a rich and decadent chocolate cake typically topped with a layer of gooey marshmallow and a chocolate frosting. It’s a classic Southern dessert that’s sure to satisfy your chocolate cravings. Here’s a recipe for Mississippi Mud Cake:

Ingredients:

For the Cake:

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans or walnuts (optional)

For the Marshmallow Layer:

  • 3 cups mini marshmallows

For the Chocolate Frosting:

  • 1/2 cup (1 stick) unsalted butter
  • 1/3 cup milk
  • 1/4 cup cocoa powder
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium saucepan, melt the 2 cups of butter over low heat. Once melted, remove it from the heat and stir in the granulated sugar until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, and salt.
  4. Beat the eggs and vanilla extract into the butter and sugar mixture until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until the batter is well combined. If you’re using nuts, fold them into the batter at this stage.
  6. Pour the cake batter into the prepared baking dish and spread it evenly.
  7. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and immediately sprinkle the mini marshmallows evenly over the hot cake.
  9. Return the cake to the oven and broil for about 1-2 minutes, or until the marshmallows are golden brown. Be sure to watch them closely, as they can burn quickly.
  10. While the cake is cooling slightly, prepare the chocolate frosting. In a medium saucepan, melt the 1/2 cup of butter over low heat. Stir in the milk and cocoa powder. Bring the mixture to a boil, then remove it from the heat.
  11. Gradually add the powdered sugar and vanilla extract, stirring until the frosting is smooth and well combined.
  12. Pour the warm chocolate frosting over the marshmallow layer, spreading it evenly.
  13. Allow the cake to cool completely before serving. You can also refrigerate it to set the frosting further if desired.
