Baked Salsa Verde Chicken

Baked Salsa Verde Chicken is a flavorful and easy-to-make dish that features tender chicken breasts baked in a tangy and vibrant salsa verde sauce. Here’s a simple recipe to get you started:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde (store-bought or homemade)
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish large enough to fit the chicken breasts.
  2. Season the chicken breasts with ground cumin, chili powder, garlic powder, salt, and black pepper. Rub the seasonings evenly over both sides of the chicken.
  3. Heat the olive oil in a skillet over medium-high heat. Add the chicken breasts and sear them for about 2-3 minutes on each side until they turn golden brown. This step is to give the chicken a nice sear; it won’t be fully cooked at this point.
  4. Remove the seared chicken from the skillet and place them in the greased baking dish.
  5. In a bowl, mix together the salsa verde and sour cream until well combined.
  6. Pour the salsa verde and sour cream mixture evenly over the chicken breasts.
  7. Sprinkle the shredded cheese on top of each chicken breast.
  8. Cover the baking dish with aluminum foil.
  9. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the cheese is melted and bubbly.
  10. If you want the cheese to be slightly browned and bubbly on top, you can remove the foil during the last 5-10 minutes of baking.
  11. Once done, remove the baking dish from the oven, and let it rest for a few minutes.
  12. Garnish with chopped cilantro if desired.

Serve your Baked Salsa Verde Chicken with rice, tortilla chips, or warm tortillas for a complete and delicious meal. The salsa verde sauce adds a zesty kick to the dish, making it a crowd-pleaser. Enjoy!
