Apple ”Enchilada” dessert

Apple enchiladas are a delightful dessert that combines the flavors of baked apples, cinnamon, and sugar wrapped in tortillas and typically served warm with a drizzle of caramel sauce or a scoop of vanilla ice cream. It’s a quick and easy dessert to make, perfect for satisfying your sweet cravings. Here’s a simple recipe:

Ingredients:

For the Filling:

  • 4 cups of peeled, cored, and thinly sliced apples (such as Granny Smith)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons butter

For the Enchiladas:

  • 6 small flour tortillas
  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

For Serving (optional):

  • Caramel sauce
  • Vanilla ice cream

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over medium heat, melt the 2 tablespoons of butter. Add the sliced apples, 1/2 cup of granulated sugar, 1 teaspoon of ground cinnamon, and lemon juice. Cook for about 5-7 minutes or until the apples soften slightly and the sugar has dissolved. Remove from heat.
  3. In a separate shallow dish, combine 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon. This will be used to coat the tortillas.
  4. Take one tortilla, brush it with melted butter, and then sprinkle the cinnamon-sugar mixture on both sides. Place a portion of the cooked apple mixture (about 1/6th) in the center of the tortilla.
  5. Roll up the tortilla, tucking in the sides as you go, to form an enchilada. Place it seam-side down in a baking dish.
  6. Repeat the process with the remaining tortillas and apple filling.
  7. Once all the enchiladas are assembled in the baking dish, you can brush the tops with any remaining melted butter and sprinkle some extra cinnamon-sugar on top.
  8. Bake in the preheated oven for about 20-25 minutes, or until the enchiladas are golden brown and slightly crispy.
  9. Remove from the oven and let them cool slightly.
  10. Serve the apple enchiladas warm, drizzled with caramel sauce and a scoop of vanilla ice cream, if desired.
