Butter Pecan Pound Cake

Posted on October 3, 2023

Butter Pecan Pound Cake is a delicious dessert that combines the rich flavors of butter, toasted pecans, and a dense, moist pound cake. It’s a classic Southern dessert known for its indulgent taste and texture. Here’s a basic recipe for Butter Pecan Pound Cake:

Ingredients:

For the Cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans, toasted

For the Glaze:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 325°F (163°C). Grease and flour a bundt cake pan or a pound cake pan.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, which should take about 3-5 minutes.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Stir in the vanilla extract.
  6. Gently fold in the toasted pecans.
  7. Pour the batter into the prepared cake pan and spread it evenly.
  8. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the glaze. In a small saucepan, melt the butter over medium heat. Stir in the sugar, buttermilk, and baking soda. Bring to a boil, stirring constantly, and then reduce the heat to low and simmer for 5 minutes. Remove from heat and stir in the vanilla extract.
  10. Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, invert it onto a serving plate or wire rack.
  11. While the cake is still warm, poke several holes in the top using a skewer or fork, and then pour the glaze over the cake, allowing it to soak in.
  12. Allow the cake to cool completely before slicing and serving.

Enjoy your homemade Butter Pecan Pound Cake! It’s a delightful treat that’s perfect for any occasion.
