Keto pancakes are a low-carb alternative to traditional pancakes, making them suitable for a ketogenic diet. They are typically made with ingredients like almond flour or coconut flour instead of regular flour and are sweetened with keto-friendly sweeteners like erythritol or stevia. Here’s a basic recipe for keto pancakes:

Ingredients:

  • 1 cup almond flour or coconut flour
  • 2 tablespoons granulated erythritol or your preferred keto-friendly sweetener
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk or coconut milk
  • 1 teaspoon vanilla extract
  • Butter or coconut oil for cooking
  • Optional toppings: sugar-free syrup, berries, whipped cream (check carb content)

Instructions:

  1. Prepare Dry Ingredients:
    • In a mixing bowl, whisk together the almond flour or coconut flour, granulated erythritol, baking powder, and salt. Make sure the dry ingredients are well combined.
  2. Mix Wet Ingredients:
    • In another bowl, whisk the eggs, almond milk or coconut milk, and vanilla extract until thoroughly combined.
  3. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and mix until you have a smooth pancake batter. Allow the batter to sit for a few minutes to thicken slightly. If it becomes too thick, you can add a little more almond milk or coconut milk to reach your desired consistency.
  4. Heat a Pan:
    • Heat a non-stick skillet or griddle over medium-low heat. Add a small amount of butter or coconut oil to grease the surface.
  5. Cook the Pancakes:
    • Pour about 1/4 cup of the pancake batter onto the hot skillet for each pancake. Use a spoon or the back of a ladle to spread the batter into a round shape.
  6. Cook Until Bubbles Form:
    • Cook the pancakes until you see bubbles forming on the surface, which usually takes 2-3 minutes.
  7. Flip and Cook the Other Side:
    • Carefully flip the pancakes using a spatula and cook for another 1-2 minutes on the other side, or until they are golden brown and cooked through.
  8. Serve:
    • Remove the keto pancakes from the skillet and serve them hot with your choice of toppings. Sugar-free syrup, berries, and a dollop of whipped cream are popular keto-friendly options.
