Muffins

Basic Muffins

Ingredients:

  • 2 cups (250g) all-purpose flour

  • 1/2 cup (100g) granulated sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 cup (240ml) milk

  • 1/3 cup (80ml) vegetable oil (or melted butter)

  • 1 large egg

  • 1 teaspoon vanilla extract

Optional Add-ins:

  • 1 cup fresh or frozen blueberries, chocolate chips, nuts, or chopped fruits


Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin pan with paper liners or grease lightly.

  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.

  3. In another bowl, mix wet ingredients: milk, oil, egg, and vanilla extract.

  4. Combine wet and dry ingredients gently using a spatula or spoon. Do not overmix; batter should be slightly lumpy.

  5. Fold in add-ins (if using) carefully.

  6. Scoop batter into muffin cups, filling each about 2/3 full.

  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool in the pan for 5 minutes, then transfer to a wire rack.


Tips:

  • For extra soft muffins, don’t overmix the batter.

  • You can sprinkle a little sugar on top before baking for a sweet crust.
