Oxtail & Steak Ramen

Oxtail and steak ramen is a hearty and flavorful Japanese-inspired dish that combines tender oxtail and seared steak with a rich and savory broth. Here’s a recipe to make oxtail and steak ramen at home:

Ingredients:

For the Broth:

  • 1 pound oxtail pieces
  • 1 onion, peeled and halved
  • 3 cloves garlic, smashed
  • 1 piece of ginger (about 2 inches), sliced
  • 2 carrots, chopped
  • 4 cups beef broth
  • 4 cups water
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake (Japanese rice wine)
  • Salt and pepper to taste

For the Ramen:

  • 8 ounces ramen noodles
  • 8 ounces steak (such as ribeye or sirloin)
  • Salt and pepper for seasoning the steak
  • 1 tablespoon vegetable oil for searing the steak
  • 2 boiled eggs, halved
  • Sliced green onions for garnish
  • Nori sheets (seaweed), optional
  • Sesame seeds, optional

Instructions:

  1. Prepare the Oxtail Broth:
    • In a large pot, add the oxtail pieces and sear them over medium-high heat until they are browned on all sides.
    • Remove the oxtail from the pot and set them aside.
    • In the same pot, add the onion, garlic, ginger, and carrots. Sauté for a few minutes until they begin to soften.
    • Return the seared oxtail to the pot.
    • Pour in the beef broth and water, followed by soy sauce, mirin, and sake.
    • Season with salt and pepper.
    • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 2-3 hours or until the oxtail is tender and the broth has developed a rich flavor. You may need to skim any impurities that rise to the surface.
  2. Prepare the Steak:
    • Season the steak with salt and pepper on both sides.
    • Heat a skillet or grill pan over high heat and add the vegetable oil.
    • Sear the steak for about 2-3 minutes per side for medium-rare (adjust cooking time based on your preference).
    • Remove the steak from the heat and let it rest for a few minutes before slicing it thinly.
  3. Prepare the Ramen Noodles:
    • Cook the ramen noodles according to the package instructions, usually in boiling water for about 2-3 minutes.
    • Drain the noodles and set them aside.
  4. Assemble the Ramen Bowls:
    • Divide the cooked ramen noodles among serving bowls.
    • Ladle the oxtail broth over the noodles, making sure to include some oxtail pieces in each bowl.
    • Top with slices of seared steak, boiled eggs, sliced green onions, and nori sheets (if using).
    • Optionally, sprinkle with sesame seeds for added flavor.
  5. Serve:
    • Serve the oxtail and steak ramen hot and enjoy the rich and flavorful broth along with the tender meat and noodles.
