Keto lemon mousse is a delightful and creamy dessert that’s low in carbs and sugar, making it suitable for a ketogenic diet. It’s bursting with tangy lemon flavor and has a light and airy texture. Here’s a simple recipe to make keto lemon mousse:

Ingredients:

  • 1 cup heavy whipping cream
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener (adjust to taste)
  • 2 tablespoons lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice (from about 2 lemons)
  • 1 teaspoon pure vanilla extract
  • 1 packet (about 2.5 teaspoons) unflavored gelatin
  • 2 tablespoons cold water
  • Lemon zest or whipped cream for garnish (optional)

Instructions:

  1. Bloom the Gelatin: In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let it sit for a few minutes to bloom and soften.
  2. Whip the Cream: In a separate mixing bowl, whip the heavy whipping cream until stiff peaks form. You can use a hand mixer or a stand mixer with a whisk attachment. Be careful not to over-whip; stop as soon as stiff peaks form.
  3. Add Sweetener and Flavor: Gently fold in the powdered erythritol or your preferred keto-friendly sweetener, lemon zest, lemon juice, and vanilla extract into the whipped cream. Be gentle to maintain the mousse’s light and airy texture.
  4. Heat the Gelatin: Place the bowl with the bloomed gelatin in the microwave for about 10-15 seconds or until it’s fully melted. Make sure it doesn’t boil.
  5. Incorporate Gelatin: Gradually add the melted gelatin to the whipped cream mixture while continuously folding. Continue to fold until everything is well combined and the mixture is smooth.
  6. Chill: Spoon or pipe the keto lemon mousse into serving glasses or ramekins. Refrigerate for at least 2-3 hours, or until the mousse has set and become firm.
  7. Garnish and Serve: Before serving, you can garnish your keto lemon mousse with additional lemon zest or a dollop of whipped cream if desired.
