KETO FRIED GREEN TOMATOES

Keto fried green tomatoes are a low-carb version of a classic Southern dish. In this recipe, we’ll use almond flour instead of traditional flour to coat the tomato slices. The result is a crispy, flavorful snack or side dish that’s keto-friendly. Here’s how to make them:

Ingredients:

  • 2-3 large green tomatoes
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 tablespoons heavy cream or almond milk
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Cooking oil (such as avocado oil or coconut oil) for frying

Instructions:

  1. Prepare the Tomatoes:
    • Wash the green tomatoes and slice them into 1/4-inch thick rounds. Discard the ends.
  2. Create a Dredging Station:
    • In a shallow bowl, whisk together the eggs and heavy cream (or almond milk). This will be your egg wash.
    • In another shallow bowl, combine the almond flour, grated Parmesan cheese, paprika, garlic powder, salt, and pepper. This will be your coating mixture.
  3. Coat the Tomatoes:
    • Dip each tomato slice into the egg wash, allowing any excess to drip off.
    • Then, coat the tomato slice in the almond flour mixture, pressing the coating onto the tomato to ensure it adheres well. Place the coated slices on a plate or baking sheet.
  4. Heat the Oil:
    • In a large skillet, heat enough cooking oil over medium-high heat to cover the bottom of the pan. Heat the oil to about 350°F (175°C).
  5. Fry the Tomato Slices:
    • Carefully place the coated tomato slices into the hot oil. Be sure not to overcrowd the pan; work in batches if necessary.
    • Fry the tomato slices for about 2-3 minutes on each side, or until they are golden brown and crispy.
    • Use a slotted spatula or tongs to transfer the fried green tomato slices to a plate lined with paper towels to drain any excess oil.
  6. Serve:
    • Serve the keto fried green tomatoes hot as a snack or side dish. You can also serve them with a keto-friendly dipping sauce, such as a homemade ranch dressing.
