Ingredients:

  • 1 cup crushed pineapple (with juice), canned or fresh

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 box (3.4 ounces) instant pistachio pudding mix
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Chopped pistachios for garnish (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2. Prepare the Cake:

  • In a large mixing bowl, combine the yellow cake mix, instant pistachio pudding mix, eggs, vegetable oil, and crushed pineapple (including the juice).
  • Mix everything together until well combined, but be careful not to overmix.

3. Bake:

  • Pour the cake batter into the prepared baking pan.
