Vegetable Beef Soup

Vegetable beef soup is a hearty and comforting dish that combines tender beef, a variety of vegetables, and flavorful broth. Here’s a basic recipe to make a delicious homemade vegetable beef soup:

Ingredients:

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 cup diced potatoes
  • 1 cup frozen corn kernels
  • 1 cup frozen green beans
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

1. Brown the Beef:

  • In a large soup pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the beef stew meat and cook until it’s browned on all sides. Remove the beef from the pot and set it aside.

2. Sauté the Aromatics:

  • In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onions become translucent.

3. Add the Beef and Broth:

  • Return the browned beef to the pot with the sautéed onions and garlic.
  • Pour in the beef broth and diced tomatoes with their juices. Stir to combine.

4. Simmer:

  • Add the sliced carrots, diced celery, diced potatoes, dried thyme, and bay leaf to the pot.
  • Season with salt and black pepper to taste.
  • Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 30 minutes or until the beef and vegetables are tender.

5. Add the Frozen Vegetables:

  • Stir in the frozen corn kernels, green beans, and peas.
  • Continue to simmer for an additional 10-15 minutes until the frozen vegetables are heated through.

6. Adjust Seasoning:

  • Taste the soup and adjust the salt and pepper if needed.
  • You can also remove the bay leaf at this point.

7. Serve:

  • Ladle the vegetable beef soup into bowls.
  • Garnish with chopped fresh parsley if desired.
