For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups peeled, cored, and diced apples (about 2 medium-sized apples)

For the Cinnamon Sugar Topping:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch square baking pan or a 9-inch round cake pan.

2. Mix the Dry Ingredients:

  • In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Set aside.

3. Cream the Butter and Sugar:

  • In a separate mixing bowl, using an electric mixer or by hand, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

4. Add Eggs and Vanilla:

  • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  • Stir in the vanilla extract.

5. Alternate Dry Ingredients and Sour Cream:

  • Gradually add the dry ingredients to the wet mixture in three parts, alternating with the sour cream. Begin and end with the dry ingredients.
  • Mix until just combined after each addition, being careful not to overmix.

6. Fold in Apples:

  • Gently fold in the diced apples into the cake batter.

7. Pour into Pan:

  • Pour the cake batter into the prepared baking pan, spreading it out evenly.

8. Make the Cinnamon Sugar Topping:

  • In a small bowl, combine the 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon.
  • Sprinkle the cinnamon sugar mixture evenly over the cake batter.

9. Bake:

  • Place the pan in the preheated oven and bake for 40-45 minutes or until a toothpick or cake tester inserted into the center comes out clean.

10. Cool and Serve:

  • Allow the cinnamon apple cake to cool in the pan for about 10-15 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.

11. Slice and Enjoy:

  • Once the cake has cooled, slice it into squares or wedges and serve.
