Air Fryer Potato Skins

Air fryer potato skins are a delicious and crispy appetizer or snack that’s a healthier alternative to traditional deep-fried potato skins. Here’s a recipe to make air fryer potato skins:

Ingredients:

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 4-6 slices of cooked bacon, crumbled
  • 2-3 green onions, thinly sliced
  • Sour cream (for dipping)

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
  2. Prepare the Potatoes: Scrub the potatoes thoroughly to remove any dirt. Pat them dry with a paper towel. Prick the potatoes several times with a fork to allow steam to escape during cooking.
  3. Air Fry the Potatoes: Place the potatoes directly in the preheated air fryer basket. Cook for about 35-40 minutes, turning them halfway through the cooking time, until they are tender and easily pierced with a fork. The exact cooking time may vary depending on the size and type of your air fryer, so keep an eye on them.
  4. Cool and Cut: Allow the cooked potatoes to cool for a few minutes until you can handle them comfortably. Then, cut each potato in half lengthwise.
  5. Scoop Out the Flesh: Use a spoon to carefully scoop out the flesh from each potato half, leaving about 1/4 inch of potato flesh attached to the skin. Save the scooped-out potato flesh for another use (e.g., mashed potatoes).
  6. Season and Oil: Brush the inside and outside of each potato skin with olive oil. Season the skins with salt and pepper to taste.
  7. Air Fry Again: Place the seasoned potato skins in the air fryer basket, ensuring they are not overlapping. Cook for about 5-7 minutes or until they become crispy and golden brown.
  8. Add Toppings: Remove the potato skins from the air fryer and immediately sprinkle each one with shredded cheddar cheese. Place them back in the air fryer for another 1-2 minutes, or until the cheese is melted and bubbly.
  9. Serve: Remove the potato skins from the air fryer, and while they are still hot, sprinkle them with crumbled bacon and thinly sliced green onions.
  10. Serve with Sour Cream: Serve the air fryer potato skins with a side of sour cream for dipping.

These air fryer potato skins are a crowd-pleaser and perfect for parties or game day snacks. They’re crispy on the outside, loaded with cheesy and savory goodness, and sure to be a hit with your guests.
