BEST MOTHER’S CRACK CAKE

Instructions:

For the Chocolate Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined, but don’t overmix.
  4. Stir in the boiling water until the batter is smooth. The batter will be thin, but that’s okay.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.

For the Chocolate Frosting:

  1. In a large mixing bowl, beat the softened butter until creamy and smooth.
  2. Add the cocoa powder, powdered sugar, milk, vanilla extract, and a pinch of salt to the butter. Beat on low speed until the ingredients start to combine, then increase the speed to medium-high and beat until the frosting is smooth and fluffy.

Assembling the Cake:

  1. Once the cakes have cooled completely, place one layer on a serving plate or cake stand.
  2. Spread a generous layer of chocolate frosting over the top of the first cake layer.
  3. Place the second cake layer on top of the frosting.
  4. Frost the top and sides of the entire cake with the remaining chocolate frosting. You can use a spatula or a piping bag to decorate the cake further if desired.
