Mexican taco lasagna is a delicious twist on traditional lasagna, combining the flavors of tacos and lasagna into one hearty and satisfying dish. Here’s a recipe for Mexican taco lasagna:Ingredients:

For the Meat Filling:

  • 1 pound ground beef or ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

For the Layering:

  • 12-15 small corn tortillas
  • 1 (8-ounce) can tomato sauce
  • 1 cup sour cream
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives (optional)
  • Chopped fresh cilantro and green onions for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Meat Filling:
    • In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it apart as it cooks.
    • Add the chopped onion and minced garlic, and cook for a few minutes until the onion is translucent.
    • Stir in the taco seasoning mix, diced tomatoes, black beans, and corn kernels. Cook for another 5-7 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
  3. Assemble the Lasagna:
    • In a 9×13-inch baking dish, spread a thin layer of tomato sauce on the bottom.
    • Place a layer of corn tortillas on top of the sauce, overlapping slightly to cover the bottom of the dish.
  4. Layer the Meat Mixture:
    • Spoon half of the meat mixture over the tortillas.
  5. Add Cheese:
    • Sprinkle half of the shredded cheddar and Monterey Jack cheeses over the meat.
  6. Repeat Layers:
    • Place another layer of tortillas over the cheese.
    • Add the remaining meat mixture.
  7. Final Layers:
    • Place a final layer of tortillas over the meat.
    • Spread the sour cream evenly over the top layer of tortillas.
    • Pour the remaining tomato sauce over the sour cream.
    • Sprinkle the remaining shredded cheese on top.
  8. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes or until the lasagna is heated through and the cheese is melted.
  9. Serve:
    • Remove the lasagna from the oven and let it cool slightly.
    • Garnish with shredded lettuce, diced tomatoes, sliced black olives (if using), chopped cilantro, and green onions.
  10. Slice and Enjoy:
    • Slice the Mexican taco lasagna into squares and serve hot.
