Basic Muffins
Ingredients:

2 cups (250g) all-purpose flour

1/2 cup (100g) granulated sugar

1 tablespoon baking powder
-
1/2 teaspoon salt
-
1 cup (240ml) milk
-
1/3 cup (80ml) vegetable oil (or melted butter)

1 large egg
-
1 teaspoon vanilla extract
Optional Add-ins:

1 cup fresh or frozen blueberries, chocolate chips, nuts, or chopped fruits
Instructions:

Preheat oven to 375°F (190°C). Line a muffin pan with paper liners or grease lightly.

In a large bowl, whisk together flour, sugar, baking powder, and salt.

In another bowl, mix wet ingredients: milk, oil, egg, and vanilla extract.

Combine wet and dry ingredients gently using a spatula or spoon. Do not overmix; batter should be slightly lumpy.

Fold in add-ins (if using) carefully.

Scoop batter into muffin cups, filling each about 2/3 full.

Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

Cool in the pan for 5 minutes, then transfer to a wire rack.
Tips:

For extra soft muffins, don’t overmix the batter.

You can sprinkle a little sugar on top before baking for a sweet crust.
