Easy Cabbage Soup

Here’s a simple and easy recipe for cabbage soup:

Ingredients:

  • 1 small head of cabbage, shredded
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 stalks of celery, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth (or chicken broth if you prefer)
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Heat a large soup pot over medium heat and add a drizzle of olive oil.
  2. Add the diced onion and minced garlic to the pot and sauté for about 2-3 minutes, or until the onion is translucent and fragrant.
  3. Add the sliced carrots and chopped celery to the pot and continue to sauté for another 2-3 minutes.
  4. Stir in the shredded cabbage and cook for an additional 5 minutes, allowing the cabbage to wilt and soften.
  5. Pour in the vegetable or chicken broth and bring the soup to a boil.
  6. Reduce the heat to low, add the diced tomatoes (with their juice), dried thyme, dried oregano, salt, and pepper. Stir well to combine.
  7. Simmer the soup for about 20-30 minutes, or until all the vegetables are tender.
  8. Taste and adjust the seasoning with more salt and pepper if needed.
  9. Serve hot and enjoy your easy cabbage soup!

You can customize this soup by adding other vegetables or herbs that you like. Some people like to add a splash of vinegar or lemon juice for a bit of acidity, or you can top it with some grated Parmesan cheese for extra flavor. It’s a versatile recipe that you can make your own!
