German Potato Pancakes,

German potato pancakes, also known as “Kartoffelpuffer” or “Reibekuchen,” are a delicious and traditional German dish made from grated potatoes mixed with various ingredients and then fried until crispy. They are often served as a side dish or snack and are particularly popular during the fall and winter months, especially around Christmas markets in Germany. Here’s a basic recipe for making German potato pancakes:

Ingredients:

  • 4 large potatoes (about 2 pounds), peeled and grated
  • 1 small onion, finely grated (optional, but traditional)
  • 2 eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions:

  1. Grate the Potatoes: Using a grater or food processor, grate the peeled potatoes. If you’re using a food processor, it’s a good idea to press out some of the excess liquid from the grated potatoes using a clean kitchen towel or paper towels.
  2. Grate the Onion: If you choose to use onion, finely grate it and mix it with the grated potatoes.
  3. Combine Ingredients: In a large bowl, combine the grated potatoes (and onion), eggs, flour, salt, and pepper. Mix everything well to form a thick batter.
  4. Heat Oil: In a large skillet or frying pan, heat about 1/4 inch of vegetable oil over medium-high heat. You’ll want the oil to be hot but not smoking.
  5. Fry the Pancakes: Take a spoonful of the potato mixture and carefully place it into the hot oil, flattening it with the back of the spoon to form a pancake shape. You can make them as big or as small as you like, but they’re typically around 3-4 inches in diameter. Fry the pancakes in batches, being careful not to overcrowd the pan.
  6. Cook Until Golden Brown: Fry the potato pancakes for about 2-3 minutes on each side or until they are golden brown and crispy. Use a spatula to flip them over.
  7. Drain and Serve: Once the pancakes are done, remove them from the oil and place them on a plate lined with paper towels to drain any excess oil.
  8. Serve: German potato pancakes are best served hot. You can serve them with a variety of toppings such as applesauce, sour cream, or even smoked salmon. Some people also enjoy them with a sprinkle of powdered sugar for a touch of sweetness.
