Home made Keto Blueberry donuts

Sure, here’s a recipe for homemade keto blueberry donuts. These donuts are low in carbs and sugar, making them suitable for a ketogenic diet.

Ingredients:

For the donuts:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tbsp melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1/2 cup fresh or frozen blueberries (if using frozen, thaw and drain them first)

For the glaze:

  • 1/4 cup powdered erythritol
  • 1-2 tbsp unsweetened almond milk
  • 1/4 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray or a light coating of coconut oil.
  2. In a large bowl, whisk together the almond flour, coconut flour, powdered erythritol, baking powder, and salt.
  3. In a separate bowl, beat the eggs, almond milk, melted coconut oil or butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until you have a smooth batter.
  5. Gently fold in the blueberries. Be careful not to overmix, as this can break the blueberries and turn the batter blue.
  6. Spoon the batter into the greased donut pan, filling each cavity about 2/3 full.
  7. Bake in the preheated oven for 15-18 minutes or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.
  8. While the donuts are baking, prepare the glaze. In a small bowl, whisk together the powdered erythritol, almond milk, and vanilla extract until you have a smooth glaze.
  9. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  10. Once the donuts are cool, drizzle the glaze over the top of each donut.
  11. Let the glaze set for a few minutes, and then your keto blueberry donuts are ready to enjoy!

Feel free to adjust the sweetness to your liking by adding more or less sweetener to the glaze. These donuts are best when they are fresh, but you can store any leftovers in an airtight container in the refrigerator for a day or two. Enjoy your homemade keto blueberry donuts!
